Scrumptious Recipes to help you Savor St. Patrick's Day

As most of you know or will come to know, we at Sterling Engagements love holidays! If we could celebrate every single one, we would, and so very often we do.

From Saint Patrick to Snakes, there is a whole rich history of how this day came to be, including the St. Patrick's Day parade which truly introduced the idea of celebration to America. But what many remember most about St. Patrick's Day, is the spirit, wearing green and pinching those who don't, the extra luck and of course fabulous food and drinks!

So in honor of one of our favorite holidays, here are some of the best recipes around from Epicurious that we believe contribute in making this day so great!

Corned Beef Hash with Fried Eggs












2 russet (baking) potatoes (about 1 pound)
1 large onion, cut into 3/4-inch pieces
1 large garlic clove, minced
1/2 stick (1/4 cup) unsalted butter
1 green bell pepper, chopped coarse
1 tablespoon all-purpose flour
3/4 cup beef broth
2 tablespoons bottled beet horseradish
1 tablespoon Worcestershire sauce
1/2 pound cooked corned beef (from a 3- to 4-pound corned beef brisket), cut into 3/4-inch cubes (about 2 cups)
fried eggs as an accompaniment

Peel potatoes and cut into 1/2-inch dice. Add potatoes to a large saucepan of boiling water and boil 6 minutes, or until just tender. Drain. In a large non-stick skillet cook onion and garlic in butter over moderate heat, stirring, until onion is golden. Add bell pepper and cook, stirring, 5 minutes. Sprinkle flour over mixture and cook, stirring, 2 minutes. Stir in broth, horseradish, and Worcestershire sauce and simmer, stirring, 2 minutes. Add corned beef, potatoes, and salt and pepper to taste and cook over moderate heat, turning hash, until browned and crisp, about 15 minutes. Serve hash with fried eggs.

To make corned beef:
In a kettle combine beef with cold water to cover by 2 inches and bring water to just a boil, skimming froth. Simmer beef, covered, 3 hours, or until tender. Remove kettle from heat and let beef stand in cooking liquid 20 minutes. Transfer beef to work surface and trim fat. Use beef as part of a boiled dinner and/or for making corned beef on rye. Corned beef keeps, covered and chilled, 4 days.


Irish Soda Bread

4 cups cake flour
1 tablespoon baking soda
1/2 cup sugar
1/4 teaspoon salt
1/4 cup vegetable shortening
1 cup dark raisins
1 tablespoon caraway seeds
1 cup cold milk



Preheat the oven to 400°F. Prepare a baking sheet by spraying it lightly with cooking spray or lining it with parchment paper. Sift the flour, baking soda, sugar, and salt together into a large bowl. Using a pastry cutter or two knives, cut the shortening into the dry ingredients until it resembles coarse meal. Add the raisins, caraway seeds, and milk. Mix the dough until just combined; avoid overmixing as this will cause the dough to toughen. Turn the dough into a lightly floured surface. Press the dough into a ball. Form the dough into two equal loaves, or cut into sixteen equal pieces to make rolls. Dust with flour and lightly score an "X" across the top of each roll or loaf with a sharp knife. Bake the soda bread until it is lightly browned and sounds hollow when tapped on the bottom, about eight to ten minutes for rolls and twenty-five minutes for loaves. Wrap the bread in a tea towel directly out of the oven. Cool the soda bread in the tea towel on a wire rack before serving. It can be held at room temperature for up to two days or frozen for up to four weeks.



Corned Beef with Cabbage

4 lb corned brisket of beef
3 large carrots, cut into large chunks
6 to 8 small onions
1 teaspoon dry English mustard
large sprig fresh thyme and some parsley stalks, tied together
1 cabbage
salt and freshly ground pepper


Put the brisket into a saucepan with the carrots, onions, mustard and the herbs. Cover with cold water, and bring gently to a boil. Simmer, covered, for 2 hours. Discard the outer leaves of the cabbage, cut in quarters and add to the pot. Cook for a further 1 to 2 hours or until the meat and vegetables are soft and tender. Serve the corned beef in slices, surrounded by the vegetables and cooking liquid. Serve with lots of floury potatoes and freshly made mustard.

Chocolate-Whiskey Soufflé Tarts













For crust
1 1/2 cups all purpose flour
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into small pieces
3/4 cup powdered sugar
1/2 teaspoon (scant) salt

For filling
10 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
1/4 cup Irish whiskey
1 1/2 teaspoons vanilla extract
1 1/4 teaspoons instant coffee crystals
Pinch of salt
4 large eggs, separated
1/2 cup sugar

Sweetened whipped cream
Chocolate shavings (optional)

For the crust:
Preheat oven to 350°F. Blend all ingredients in processor just until dough gathers together. Shape dough into log. Cut into 8 equal rounds. Press 1 round over bottom and up sides of each of eight 4 1/2 x 3/4-inch tartlet pans with removable bottom. Pierce crusts with fork. Bake crusts until pale golden, about 18 minutes. Cool in pans on rack.

For the filling:
Set aside generous 1/3 cup chopped chocolate. Place remaining chopped chocolate in medium metal bowl set over saucepan of barely simmering water (do not allow bottom of bowl to touch water); stir until melted and smooth. Remove bowl from over water. Whisk in whiskey, vanilla, coffee and salt, then yolks. Beat egg whites in another medium bowl until soft peaks form. Gradually add sugar, beating until stiff but not dry. Fold half of whites into chocolate mixture. Fold in reserved 1/3 cup chopped chocolate, then remaining whites. Divide mixture among crusts. Freeze at least 3 hours. (Can be made 1 week ahead. Cover and keep frozen.)

Preheat oven to 375°F. Push bottom of frozen tartlets up to release from pan sides. Arrange tartlets on pan bottoms on baking sheet. Bake until filling puffs and begins to crack, about 20 minutes. Place tartlets on plates. Spoon whipped cream alongside. Top with chocolate shavings, if desired.

Hear the message within "Fidelity" and join the fight in letting love be...

Tomorrow is a big day in the Supreme Courts. I saw this video and it moved me to tears. I had to post it for all of you to view and hopefully continue in spreading the word. I try to omit politics and religion within my business whenever possible, however this video and movement is too powerful to remain silent about. Let's help in letting love be love and not strip those fortunate enough to find it of that power.


Ken Starr, who led the campaign to impeach President Bill Clinton, filed a legal brief last month -- on behalf of the "Yes on 8" campaign -- that would forcibly divorce 18,000 same-sex couples that were married in California last year before the passage of Prop 8.

Watch "Fidelity" and sign our letter to the state Supreme Court before they hear oral arguments in the case on March 5. Tell the Supreme Court to invalidate Prop 8, reject Ken Starr's case, and let loving, committed couples marry.

Featured Wedding: Amanda and Luis


Amanda and Luis were married in November of 2008 at the Westlake Village Inn in Westlake, CA. Their ceremony was at Agoura Bible Fellowship in Agoura Hills, CA. Amanda wanted fall colors for her color scheme and since it was November the season itself was a perfect backdrop for this beautiful wedding.

For their placecards, we constructed a beautiful manzanita tree filled with clusters of flowers and surreounded by candles. Instead of using stickers or colors to notify the catering department which entree choice their guests chose, we decided to use Autumn leaves to compliment the overall theme of the evening.

For favors, Amanda purchased boxes with ribbon and filled them with handmade truffles. They were the talk of the evening and guests could not get enough of them.










Since Luis loves Funfetti Cake, Amanda chose to surprise him and have one of their layers be Funfetti, filled with rainbow sprinkles and yummy frosting.

Bridal Premiere Question 7

Question: How do I arrange family photos with a blended (divorced family)?- Christa Hudson

Answer: Dear Christa,
First off, the wedding planner in me wants to immediately rephrase your question to how does your planner or photographer arrange your family photographs for you on your wedding day. I cannot help but correct that, only because come wedding day this is your day and not something you should have to worry about it.


However, blended families are so much more common than they were 20 years ago. It's important to know that everyone in your family, regardless of any history, is there to support you on your day and despite the circumstances that sometimes do they should act accordingly in respect to you and your new husband. The majority of them time, things run perfect and all parties involved typically are beyond considerate. If you are concerned that this could be somewhat of an issue, there is always a delicate way to handle things both prior to and on the day of.

Here are a few tips and tricks to insure that your photography on your wedding day runs seamless.

1. Plan Ahead. If you have a planner, insure that they are aware of the circumstances entirely in advance, so they can create somewhat of a plan to insure a smooth experience for you and your family. If you don't have a planner, make sure you inform both your photographer, videographer and the onsite coordinator at your ceremony location. In addition, I would suggest filling in a non-confrontational family member or friend and asking them for a bit of assistance during the photography session following your ceremony or prior to. What this person can do is act as a mediator to make sure everything runs properly and alleviate any issue prior to one even beginning. Also, it can't hurt to communicate with certain family members if necessary and let them know the game plan for wedding day, as well as how important it is to you for them to be mindful of your feelings on this occasion.


2. Speak with your photographer to create somewhat of an outline/time frame on what pictures are important, with whom and in what order. This enables the photographer to proceed accordingly and not utilize any extra time during your session to map things out while leaving family members there to converse.


3. Always take extra steps just to be safe. In my experience it is always better to be safe than sorry. This day only happens once and it is so important to not let anything jeopardize your magic moments. To do so, find subtle ways to avoid tension or contact when necessary. If you have divorced parties involved, take pictures separately, take pictures with step-members, then take a few with the whole crowd. Your family will understand and be happy to do whatever you ask on this day. Also, there is nothing wrong with placing certain members on different sides of the shot if you feel it is necessary.

Bridal Premiere Question 6

Question: As a Groom, how can I get my points across to my Bride and her Mother? - Ryan McGill

Answer: Ryan, such a brave question and I'm so pleased to answer it for those that do not always feel comfortable stepping out and letting us know how or what they are thinking.



The truth is though, the best thing you can do is to just be honest and vocal. Your words will be much appreciated because when it comes down to it, this is your day too! There is nothing that your bride and family will want more than to know that your opinion has been heard and reflects in this day also. While it may sometimes seem difficult to get a word in with all the typical chaos of planning a wedding, most brides love it when their groom takes an active role in the process. So, please speak up and be proud to do it!

If you feel that when you try, your points are not addressed or not heard, try speaking to your planner and she may aid in making this easier.

Also, there are many websites which offer helpful tips and advice for Grooms. This trend is somewhat newer but definitely worth checking out when you are a groom and have questions. Some of my favorites are Groom Grove, The Man Registry and Groom's Club.

Bridal Premiere Question 5

Question: My fiance and I have been together for almost six years. He loves my heart and says he thinks I live in a fairytale my questions is the dress... Should I go for a fairytale Cinderella like dress or a elegant bride womanly dress? I love both looks, both have a different feel what should I do? - Gina

Answer: Gina, I love your question! I feel so bad that you are genuinely struggling with this and hope my answer gives you some relief!


First, remember this is your day, so you need to go with your instinct or gut feeling on this. While your fiance may feel your living in a fairytale, ultimately if you are... then you wear your fairytale dress and feel proud doing it! He loves you no matter what and is going to be speechless from your beauty regardless of which dress you pick, what's important is how you feel.


So many brides have dreamed about their day from the time they were a little girl if you have always had a fairytale vision than I honestly believe you should proceed with this type of dress. However, if you are feeling the urge to go more modern and choose that elegant "womanly" dress, don't let your fiance's opinion of how you live steer you away. If you want that look, regardless of what is holding you back or making you hesitant, this is the one day that it is okay to go for it!

Another option would be selecting a dress that features characteristics from both gowns you like. Maybe a gown that has the long fairytale train or bustle you love but a fitted look or has the detail you love yet with a sexy vibe to it. Similar to this Ines Di Santo look. There are so many designers that create gowns which combine various styles to them. If you have the time go to several stores and try on as many different looks as you can. As you try each gown on you will get a feeling that will help you and hint to you what feels right.


My last suggestion to you would be to wear two gowns. If it is in your budget this is a trend that has become more and more popular over the years and enables you to satisfy both options. You can wear your fairytale dream gown down the aisle and long enough for your grand entrance and first dance and then slyly switch into your party dress for the remainder of the night. It's an exciting and fun secret to keep from your guests and your new husband! When selecting this option, I often suggest renting one of the dresses to avoid double the cost.
